There is something magical about Sunday mornings. For me, it always feels like I need to cherish Sunday the most because when it is over, the workweek begins. That’s why I love Sunday brunch – it is an ode to the final day of the weekend, a celebration of waking up late and languishing over a meal, gifts that only the weekend can offer. This morning, I’ll be reveling in my Sunday with the help of a cheesy, meaty breakfast casserole.
The recipe is simple and by no means original, but for a college student with a limited budget and fairly basic cooking tools, it's perfect. Here’s what you need:

- 1 pkg breakfast sausage, cooked, drained and crumbled
- 1 pkg crescent rolls
- 6 eggs, beaten with a pinch of salt and lots of pepper
- 2 cups (or more) shredded cheddar cheese
- Rectangular casserole dish (prepped with cooking spray or melted butter)
Once you assemble and prepare those items, all you have to do is layer them in a rectangular casserole dish. It’s easy:
1. Place the crescent rolls at the bottom of the pan. Use your fingertips to pat it down, sealing any gaps in the dough.
2. Pour over the beaten eggs.
3. Pour the crumbled sausage into the pan and distribute evenly.
4. Pour the shredded cheese on top. You can use as much or as little as you'd like, based on your cheese preference. I used 2 1/2 to 3 cups for medium cheesiness.
5. Bake for 25 to 30 minutes at 350 F. Before you take it out, dip a butter knife into the casserole. If it comes out clean, it's done. If it comes out with uncooked egg on it, check on it every 2-3 minutes until it's done. And when it is, the casserole should be bubbly and gooey and delicious, like this:
This recipe, originally from Kevin and Amanda, was easy to make and delicious to eat. I used mild pork sausage, but you can substitute other breakfast meats like turkey sausage or bacon, or add chopped veggies for a lighter option.
Serve it with smoothies (or mimosas), hash browns and mixed fruit for the full brunch experience. It also reheats well. Let the leftovers cool completely before wrapping in foil and placing in the refrigerator -- that is if you have any leftovers!
